Carrot Soup With Yogurt

Servings: 8

Ingredients: 2 teaspoons of dark sesame oil, 1/3 cup of sliced shallots, 1 pound baby carrots, peeled and cut into 2-inch pieces, 2 cups of fat-free chicken broth, 1 teaspoon of grated peeled fresh ginger, 1/2 cup 2% Greek plain yogurt, 8 fresh mint springs.

You should heat the oil in a medium saucepan over medium heat. Afterwards, add shallots to the pan and cook for 2 minutes until it is almost tender. Stir occasionally. Add the carrots, cook for 4 minutes, then add the broth and bring to a boil. You should cover and reduce heat and simmer afterwards for 22 minutes until it gets tender. Add the ginger and cook for 8 minutes until the carrots are very tender. Cover the pan and let it at room temperature for 5 minutes.

After that, pour half of the carrot mixture in the blender and blend until smooth. Then pour into a larger bowl and repeat the procedure with the remaining carrot mixture. Afterwards, heat the soup for 2 minutes and serve it with a top of plain yogurt and fresh mint springs.
