After ringing the quinoa, cook it on a saucepan with 2 1/2 cups water and a pinch of salt. Bring to a boil, reduce to a simmer, cover and cook for up to 15 minutes. Let it cool off, and then refrigerate for 2 hours. Cook beets until tender (35-45 min) while covered by an inch with water with 1 tsp. salt. Cool, peel, and chop them into 1/2-inch cubes. Mix together and use a dressing from balsamic vinegar, lemon juice, salt, pepper, and extra-virgin olive oil.
