Ingredients:
- Whole Wheat Pasta – 1 Cup
- Aubergine – ½ Portion
- Sun dried Tomatoes – ½ Cup
- Garlic – 2tbsp

- Salt and Pepper – To Taste
- Parmesan Cheese – For Garnish
Procedure:
- Boiled the pasta in 4 cups of water with a little salt and a few drops of oil

- Roast Aubergine coated with olive oil on the stove
- Peel it and roughly chop it
- In a large pan, add olive oil and saute garlic
- Add roughly chopped sun dried tomatoes, roasted Aubergine and toss
- Add the boiled pasta and give it a good toss
- Sprinkle red chilli flakes and season it with salt and pepper
- Lastly, garnish it with some Parmesan shavings
